Vegan Lunch!

Recipes, carnivores, herbivores, vegetarians, vegans, freegans, single children, twins, quintuplets...

In the vein of the depressing thread about the awful world and doing what we can...here's my contribution.

I sympathize with the vegans, but I'm not a vegan. I someday might be, but for now I'm a lunch vegan.

Most days I eat this delicious and very cheap smoothie for lunch. My mom showed it to me, and it sounds awful but it actually tastes very good.

Four or five leaves of kale, with the stems cut out of them.

A half cup of almond milk

A half cup of pineapple juice

A banana

Mix it all in a blender and drink it. It tastes good and it's very healthy and it doesn't cost the planet much to provide it to you. But it has no protein so I usually need a snack at around 4pm to keep going.

Almond milk has a little bit of protein, but you switch it out for unsweetened soy milk and get lots of protein. Or you could add a spoonful of almond butter for richness and fat to keep you full longer.

Kale smoothies are great! I like them with a little bit of pear. The pineapple sounds good,

My "green" smoothie is usually frozen berries, a banana, some orange, two heaping cups of spinach and cucumber for flavor. Sometimes I'll also use vanilla soy milk or unsweetened nut butter. I have a cheap-o blender though, so it usually takes me around a half hour to make. Can't wait for that vita-mix one day....

Today I'm going to make one for lunch later. I have fresh spinach, banana, kiwi, unsweetened soy milk and asparagus. Not sure if I'm going to use the asparagus or not...the flavor might be too overwhelming.

Yeah, you probably don't need asparagus in that kind of smoothie! For sweet smoothies I use spinach and kale for the green stuff.

I tried kale for the first time today. On its own it was certainly an acquired taste, but in my smoothie I couldn't even taste it.
