Cheap Eats: Ramen Madness

Recipes, carnivores, herbivores, vegetarians, vegans, freegans, single children, twins, quintuplets...

Even before I was in college and broke most of the time, ramen was always one of my favorite foods for its versatility.

So, nerdnyc, what say we share our nommy or weird or downright disgusting ramen recipes?

I'll start with a nommy:

Vegan Cheesy Ramen

-One package of Nissin Top Ramen Oriental
-3 to 4 tablespoons of nutritional yeast

- Microwave ramen for 4 minutes sans flavoring packet. Drain most of the water, leaving about a quarter cup in the noodles. Add half of the flavoring packet to water and stir well, then add yeast and stir even more.

Ramen Soup:

3-4 cups vegetable broth or mushroom soup
1 package ramen noodles
1/2 package Trader Joe's frozen mixed vegetables
2 teaspoons soy sauce
1/2 teaspoon chili oil
1 clove garlic

Yum!

Cold Sesame Ramen:

1 package ramen noodles
1/4 cup rice vinegar
3 tablespoons sesame paste, almond butter, or peanut butter
3 tablespoons soy sauce
2 tablespoons honey or agave
1 tablespoon dark sesame oil
1 teaspoon or more chili-garlic sauce
2 scallions, trimmed and thinly sliced
Lots of fresh cilantro
Sesame seeds

Edit: the above can get complicated with all the different liquids. If you are constantly in a rush, you could take all the above liquids and mixed them together in large amounts and store them in 1 large container. Then when you want to make the above recipe, mix the container, and pour out 1/2 a cup's worth. It won't be as good as if you kept the liquids separate but it isn't as bad as it sounds!

This might sound a little gross but sometimes if I'm feeling snackish I'll eat raw ramen with sea salt. It tastes sort of like potato chips!

Smack ramen ( not Top) beef or pork. Cook beyond al dente but before moosh. Drain all but a couple of spoons of the water, add flavor packet and too many red pepper flakes, mix well. Serve with very tall glass of cold milk.

Make ramen as directed, but drain most of the water before you add the flavor packet. Then add a shitload of sriracha sauce. Enjoy. And burn.

Under "TEUMSAE" it says "FLAVOR CULTURE HUMAN". I assume this means that it's flavored with cultured human?

It's the Big V, and it's no-bullshit spicy. H-mart in midtown has a wide selection of anus-burningly good ramens.

And then I just cook in mushrooms and vegetables or whatever and whatever.

This was my go-to for the past three months (in fact, I had some last night):

  • 3-4 cups of water in a pot, boil
  • Add one giant rubber spatula glob of Miso paste
    --> I bought this: Image the last time I restocked, although Sunshine Mart has cheaper (and larger) containers
  • Add a handful of dried seaweed
  • Cut a palm-width of firm tofu (I don't like the silky stuff) into giant cubes of protein deliciousness, press and drop into the pot without burning splatter hitting your skin
  • Crack in half a square of cheap ramen, boil with the miso
  • Serve! (Sometimes, I'll eat more tofu with miso paste and dried bonito on the side)

An old hangover helper (made more effective when accompanied by the soothing tones of Bob Ross) was "The Hearty Bowl of Mush":

Campbell's Green Pea Soup (made with milk)
A couple of veggie dogs
A packet of Ramen
Curry powder
Sriracha sauce.
